1) sorry, but we don't provide the Jotinstallation except for Cloud plans. But you may find many experts in our community to ask.
2) Sorry, chat's are available only for registered members. Only if you setup the guest mode in Rocket chat.
3) Seems you got our info wrong - our Cloud plans are described here https://una.io/page/hosting - any of them includes the Jot server setup.
4) About demo - you may check it on una.io or online.me site after the registration.
